ITALIAN CROCK-POT CHICKEN AND VEGETABLES
My family calls this one pizza chicken because that is the first thing that comes to mind when you lift the lid!
Put all ingredients into crock pot and cook on low for 6 hours. Serve over pasta or rice and top with cheese if desired.- 4-5 chicken breasts (frozen or fresh)
- 1 onion, chopped
- 1 zucchini or yellow squash, chopped
- fresh spinach, 2 handfuls
- sliced mushrooms
- bell peppers, sliced
- 1 jar spaghetti sauce
- seasonings of your choice (I use oregano, garlic powder, and red wine. Can also use cajun seasoning.)
- pasta or rice of your choice
- cheese for topping (shredded or parmesan)

BOURBON AND CIDER-GLAZED MEATBALLS
MEATBALLS: (Makes 18)
1 lb ground turkey
1/2T fresh sage, chopped
1/2T fresh rosemary, chopped
1/2t garlic powder
1/4t salt
1/8t black pepper
1/2T dried onion flakes
1 egg
GLAZE:
1 1/2c apple cider
1/4 c bourbon
3″ sprig rosemary
Brown meatballs in a pan with oil to brown outside. Pour glaze over and heat until ready to serve.

2T minced ginger
1 onion, diced
1t garlic powder
1/4c panko breadcrumbs
1 egg
Make meatballs and fry lightly in a pan of oil to brown outside or bake for 10-12min and put into crock pot.
SAUCE: (You can buy Iron Chef's General Tso's pre-made sauce in a bottle, too.)
1t sesame oil
2T rice wine vinegar
2T dry sherry
3T soy sauce or tamari
1/4c water
3T honey
2t corn starch
1/4c scallions, chopped
4-5 small dried red chili peppers, chopped (optional)
Pour sauce over and heat on low until ready to serve.
Or you can just leave them in pan and cooked until cooked through and simmer with sauce for 5 min before serving.

CROCK-POT COCONUT CHICKEN (The Recipe Critic)
4-5 chicken breasts (I always use frozen) or 6 boneless chicken thighs
1/2c light coconut milk
2T brown sugar
3T soy sauce
2t minced garlic
1/4t cloves
6T shredded coconut
Place chicken in crock pot. Stir together remaining ingredients in a bowl and poor over chicken. Cook on low for 4-5 hours and serve over rice.

HONEY SESAME CHICKEN (TableforTwoBlog.com)
1-2lbs boneless chicken (or chicken wings)
3/4c honey
1/2c soy sauce
1/4c ketchup
2T oil (canola, sesame, vegetable, etc.)
2t minced garlic
1/2c onion, diced
red pepper flakes, optional
cornstarch
sesame seeds
Steamed broccoli florets (or other vegetable), optional
Combine honey, soy sauce, ketchup, oil, garlic, and onion. Pour over chicken in crock pot and cook on low for 3-4 hours or high for 2 hours. When chicken is cooked, remove and cut into chunks or strips. Before returning to pot add cornstach+water to thicken sauce- can do this in crockpot or pour into a pan). Stir in chicken, sesame seeds, and broccoli (or other veggie). Serve over rice.

CHICKEN AND SWEET POTATO STEW (Rebecca)
1/4 c all-purpose flour
1/4 t garlic salt
3 boneless, skinless chicken breasts, cut into 1in pieces
1 T oil
1 medium onion, quartered, sliced
1t garlic
1 1/2 c apple cider
1can chicken broth
2 c cubed, peeled sweet potatoes (1/2-in)
2 (14 1/2 oz) cans diced tomatoes
2T tomato paste
1 teaspoon dried basil leaves
In large plastic bag, combine flour and garlic salt. Add the chicken and shake until coated.
Heat oil in pot over medium-high heat until hot. Add chicken; cook 3 min, or until just browned. Remove chicken. Add onion and garlic; cook and stir 2 minutes until tender; adding some apple cider if necessary to prevent sticking. Stir in remaining apple cider, chicken broth, sweet potatoes, tomatoes, tomato paste, basil, and chicken. Bring to a boil. Reduce heat to low; simmer 35 to 40 min, or until chicken in no longer pink and potatoes are tender, stirring occasionally.
You can also make it in the crock pot. Just brown the chicken, onioin, garlic in a pan before adding all ingredients to the crock pot.

SHREDDED BEEF BARBECUE
This is such an easy recipe, my 6 yr old makes it himself. It could not be simpler or more delicious!
2-3lb lean beef roast(chuck,rump roast,or top round)
1c root beer
2c barbecue sauce
Put everything into crock pot and cook on low for 8hrs. Beef will fall apart. Eat as is or serve on rolls.

MEXICAN CORN CHOWDER (Kim S)
2 1/2 c chopped cooked chicken
11 oz can of corn
14.5 oz can diced tomatoes, drained
1 can of cream of potato soup
4 oz can of green chilies
2 T. fresh cilantro
1 pkg taco seasoning mix
3 cups of chicken broth
8 oz of sour cream
4oz cheddar cheese or velveeta
In the crock pot, combine chicken, corn, tomatoes, soup, undrained chilies, cilantro, and taco seasoning. Mix well. Stir in chicken broth. Cover and cook on low for 8 to 10 hours or high for 4 to 5. Stir 1 cup of the hot soup into the sour cream. Stir sour cream mixture and cheese into the crock pot. Cover and let stand 5 minutes. Stir until combined.

PASTA FAGIOLI (Olive Garden)
This recipe could not be easier and tastes so good, just like the restaurant without the wait time. The perfect one pot dinner and it practically cooks itself.
1lb lean ground beef, browned and drained
(may substitute ground turkey or an additional can of beans for vegetarian)
1/2 large red onion, chopped
1c carrots, chopped
1 celery stalk, sliced
1 can (14.5 oz) diced tomatoes (and juice)
1 can kidney beans, drained and rinsed
2 cups beef broth
1/2 of jar (16.5 oz) pasta sauce
2 tsp oregano
salt and pepper
1 T Tabasco sauce (optional)
1/2 cup dry pasta (I like ditalini), to add at end of cooking time

2-4 chix breasts or 2.5 lbs chicken thighs
salt & pepper
4t garlic
8oz sliced mushrooms
1 red pepper, sliced
1 onion, sliced thin
2/3 c marsala wine or chicken broth
14.5oz can of diced tomatoes
2t basil or 2T pesto
2T capers
2t parsley
Place chicken in a crock pot. Sprinkle with salt, pepper, and garlic. Arrange red pepper, mushrooms, and onion. Pour wine over top. Add tomatoes, pesto, capers, and parsley. Cover and cook on low 5-6 hours, stirring occasionally.

4lbs beef back ribs (cut into 1-2 rib segments)
Mix in crock pot and then coat ribs. Cook on low 8 hrs. Remove ribs. Pour off sauce and let separate. Skim off fat. Pour sauce over ribs and serve.

12 oz barbecue sauce
1/3c. italian dressing
3T brown sugar

POLYNESIAN CHICKEN
4 chicken breasts
1 t garlic powder
1 T oil
1 onion, chopped
1 can Golden Mushroom soup
1/4 c water
8oz pineapple chunks with juice
3T soy sauce
1T honey
Season chicken with garlic powder and brown in a skillet with oil. Add onion and cook.
Add remaining ingredients and bring to a boil. Simmer on low for 10 min.
OR Add to a crock pot on high until bubbly, then reduce to low.

½ c. flour
1t. salt
6oz frozen lemonade concentrate, thawed (you can cut 12oz can when frozen)
3T brown sugar
1t. balsamic vinegar
3T ketchup
Olive oil for browning.
Dredge chicken in flour and salt. Heat oil in skillet and brown outside of chix (don’t cook it). Place chix in crock pot and pour sauce over. Cover and cook on high (4hrs) or low (6-8hrs). Serve over rice.
